For this conversation, we spoke with Fausto, a chemical engineer at Taberna 3 Gallos and a passionate advocate of mixology, to share his perspective on this new expression of Raicilla.

1. The Journey and the Documentary

What was it like for you to experience this journey, and what do you think the camera captures about Raicilla, especially Raicilla Sunset?

For me, living this journey was very special, because it allowed me to connect in a deeper and more intense way with coastal Raicilla and its producers. It helped me internalize and truly empathize with the raicilleros, understanding their way of seeing and living life.

The experience was incredible, and I believe that through the filming we were able to portray, in a very human and honest way, what coastal Raicilla represents. We also captured that journey in search of a cocktail that could bring raicilleros together and that people can replicate in a simple and refreshing way.

2. The Origin of Raicilla Sunset

Raicilla Sunset was created as a new way to bring Raicilla to more people, especially through cocktails. From your perspective, what makes this expression special, and what do you think people will discover when they try it? What are your thoughts on seeing Raicilla enter new spaces and new forms of consumption?

This new expression of Raicilla stands out for its intention to unify two worlds, the sierra and the coast. Its concept is born from an analogy that is as natural as it is powerful, the path of the sun. We know that light rises in the east and, throughout the day, crosses the mountains until it finally sets in the sea.

That moment of closure, transition, and contemplation defines what El Acabo represents. It is a distillate that invites you to celebrate the end of something, whether it is a cycle, a day’s work, or simply another day as a gift of life and effort.

The second pillar of this expression is its blend of agaves, carefully selected to represent both regions. On one side, Agave maximiliana from the sierra brings structure, character, and depth. On the other, Agave angustifolia from the coast provides freshness, herbal notes, and vibrancy.

The union of both results in a balanced and complex distillate that allows the consumer to experience, in every sip, the essence of these two territories and, in an almost spiritual way, live that transition of the sun. The sunset becomes a connection between landscapes and the cultural richness that defines them.

On a personal level, seeing Raicilla open its way into new spaces and reach more people fills me with pride and satisfaction. It is a spirit that has endured over time, overcoming challenges and adversity, proving itself to be resilient.

To me, Raicilla is a warrior that never gives up. And today, those who try it do not just discover complex and extraordinary flavors, but also the legacy, history, and effort behind it.

Additionally, the creativity that emerges when integrating Raicilla into cocktails confirms something very clear. There are no limits. The versatility of the spirit and the imagination of those who work with it continue to expand its possibilities, taking this tradition into new experiences and horizons.

3. The “Sunset” Moment

The name evokes the sunset, the colors of the sky, and the atmosphere of the coast. For you, what moment or feeling best captures the spirit of Raicilla Sunset?

In the Raicilla Sunset film, the moment that best captures its essence happens at the end of the day, when we are on the beach, in a state of contemplation, letting the sunset set the rhythm and naturally guiding the elements that will bring the cocktail to life.

It is in that moment, when the cocktail is ready and I share it with my friends, that the true spirit of Raicilla Sunset is revealed. Because a sunset is always better enjoyed in the company of the people you care about.

Sharing does not just elevate the experience, it transforms it. It fills your soul. And when you enjoy something with the people around you, everything takes on a deeper meaning. Even the flavors become better.
